Boucherie West Village: Absinthe Hour at the Grand Brasserie
There are wine bars, there are cocktail dens — and then there is drinking absinthe under amber light in a room that used to be a theater. Boucherie runs one of the city’s most atmospheric bar programs inside a full-blown Parisian brasserie, which means your apéro hour can escalate into steak frites at any moment. Consider yourself warned.
The Concept
The house splits the difference between an indulgent steakhouse and a classic brasserie, built around old-school French technique and whole-animal butchery. It occupies the building that once housed the Circle Repertory Theater — a West Village stage swapped for three hundred–plus seats of Parisian theater of a different kind.
What to Order
At the bar: absinthe served with proper ceremony, French-leaning cocktails and a long wine list. From the kitchen: escargots arriving in bubbling garlic-parsley butter you will chase with bread, mousse de foie gras, the signature Boucherie burger, and steak frites that anchor the whole enterprise. Dry-aged cuts step in when the night turns serious.
The Space
Amber light, polished brass, mirrors running the walls and greenery overhead — the room glows like a postcard of Paris after dark. Butcher-counter seats put you in front of the action, a second-floor gallery hides quieter corners, and the sidewalk café is prime West Village people-watching territory.
Who It’s For
Apéritif loyalists, late diners, date nights that start with one drink and no fixed plan — and anyone who believes a bar is only as good as the kitchen behind it.
Good to Know
How does the absinthe service work? The classic ritual — fountain, sugar, slow drip — served properly; the staff will walk first-timers through it.
Can I eat at the bar or butcher counter? Yes, full menu at both — the counter seats are the house’s best-kept secret.
How late does the kitchen run? Late by neighborhood standards, which makes it a reliable second stop after a show or a first bar.
Do I need a reservation? For dinner in the main room, yes; the bar and café seats leave room for spontaneity.
Is there outdoor seating? A proper sidewalk café in season — arrive at golden hour for the full Parisian effect.
